Our Initiatives
We’ve set forth various measures in our dining locations to minimize our carbon footprint and make eco conscious choices convenient for our guests. Our sustainability initiatives include:
- Eliminated plastic straws at all our dining locations. As an alternative, we offer eco-friendly, 100% biodegradable agave straws.
- Styrofoam to-go boxes are banned from our program; biodegradable/compostable disposable-ware is provided if the option to use china is not available. We opt with reusable china whenever possible.
- We use Xprss Nap Dispensers to save energy and waste. The napkins are made of 100% recycled paper and the dispenser encourages our guests to take (& waste) fewer napkins. Energy is saved because less power is used to recycle paper products than to create them from virgin material.
- We use Ecolab's APEX dishwashing system, which uses less water than a normal dishwashing system. By using less water, energy, and labor, we are supporting our environment by limiting our carbon footprint.
- We have implemented LeanPath, which is a system to track and measure food waste. Using LeanPath allows us to make strategic adjustments to prep and production that prevent food waste from occurring.
- OZZI: OZZI containers can be purchased at The Marketplace registers for a one time, $6 fee. The OZZI reusable container permits you to enjoy our award-winning dining services on the go. To learn more about the OZZI program, visit their site here.
- Seed2Source: We partner closely with Florida local farmers to provide our guests with fresh, farm-to-table produce and dairy.
- We are a trayless campus, which results in 30,000 gallons of water saved per year.
- We recycle the following products: cardboard, glass, aluminum, paper and plastic
- The windows in The Marketplace allow us to enjoy a tremendous amount of natural light when dining. Natural light not only provides a more comfortable environment, it also reduces our energy usage by allowing us to keep some lights off. Where feasible, we’ve replaced our incandescent bulbs with compact fluorescent bulbs to reduce our energy consumption.
- When replacing equipment, we choose Energy Star rated appliances. ENERGY STAR is a U.S. Environmental Protection Agency (EPA) voluntary program that helps businesses and individuals save money and protect our climate through superior energy efficiency.
- No Idling at Loading Docks: Working with our vendors, our catering staff and our campus facility services staff to make sure all vehicles are turned off while they are parked in our loading dock.
