Food Allergies

We take pride in serving you wholesome ingredients, preparing recipes accurately and providing nutritional analysis and ingredient statements. From our general manager to our front line servers, we work carefully to address food allergies, celiac diets, or other special dietary needs.

Meet the Dietitian

Cristina Caro, MBA, RDN, LDN is a Registered Dietitian Nutritionist and Wellness Manager for Sodexo Campus Dining, to support Rollins nutrition and wellness. She is a food allergy and food safety expert and assists with special dietary needs through confidential phone consults and virtual appointments. Cristina actively promotes healthy eating and wellness through nutrition expos, snack and learns, social media, virtual contests and more. She also assists as guest speaker for health panels, classes, and meetings, participates in wellness fairs, and offers sports nutrition. She welcomes campus interviews and nutrition questions. Mindful (www.mindful.sodexo.com) is Sodexo's health & wellness approach to help you make healthy choices through transparency of ingredients, nutritious food, and satisfying portions. Mindful menu items meet stringent nutritional criteria based on the U.S. Dietary Guidelines for Americans. Each meal part is limited in calories, has fewer than 30% of calories as fat, fewer than 10 % of calories as saturated fat, and is restricted in sodium, and cholesterol. You’ll know it's Mindful when you see the green apple heart icon on the online menu and menu signs in The Marketplace

Simple Servings mindful-icon

Simple Servings is our allergen-safe dining option in The Marketplace for guests with food allergies or gluten intolerance. This station also appeals to those who prefer simple foods. The menu items are free from peanuts, tree nuts, shellfish, wheat, soy, milk products, eggs, sesame, and gluten-containing ingredients, prepared in a dedicated separate kitchen. The simple nutritious meals are prepared by staff members carefully trained to avoid cross-contact with food allergens. gluten friendlyA variety of gluten friendly items across campus and can accommodate customers with foods that are free from gluten-containing ingredients and protected against cross-contact with gluten.

Vegetarian-35x35.pngMenu items with the vegetarian icon contain no meat, fish or poultry, or any meat products such as soup base. Our vegetarian offerings meet the needs of lacto-ovo vegetarians and may include eggs and/or dairy products.

Vegan-35x35.pngVegan offerings contain no meat, fish, eggs, milk or other animal-derived products such as honey.
